Ingredients

2 cups wheat flour

1 cup rice flour

½ cup sour buttermilk

2 green chillies, chopped fine

1 small bunch coriander leaves, chopped fine

Salt to taste

Sufficient water to make a batter of pouring

Consistency
For Tempering
- ½ teaspoon mustard seeds
- ½ teaspoon cumin seeds
- ¼ teaspoon asafetida powder
- A few curry leaves
Method

Mix the wheat flour and rice flour with the sour buttermilk and add sufficient water to make batter of pouring consistency. Add the chopped chillies and coriander leaves.

Heat the pan and add all the ingredients for tempering. When the mustard seeds splutter, add the seasoning to the dosai batter. Add salt and mix well.

To prepare the tawa: Heat the tawa. Sprinkle a few drops of water. If it sizzles, the tawa is ready for use.

Heat the tawa. Put some water. When the water evaporates lower the heat.

To make the dosais: Pour a ladleful of batter on the outer edges of the tawa. Continue of pour inwards, using a circular motion to make a dasai which measure 5-6 inches. Smoothen gently with the back of the ladle to remove lumps if any.

Serve hot.
