Ingredients
- 1 cup refined flour
- 1 cup semolina
- 1 cup rice flour
- 2 teaspoons cumin seeds
- 3-4 green chillies, chopped fine
- 1 cup sour curd, salt to taste
- A small bunch coriander leaves, chopped fine
- A few curry leaves
- Water for mixing
Method
- Mix all the three flours. Add the salt, cumin seeds, green chillies, sour cud, coriander and curry leaves, and enough water to form a stiff dough.
- Set aside for at least two hours.
- Add some more water to make a dosai batter of thin pouring consistency. (It should be thinner than the ordinary dosai batter.
- TO prepare the tawa: Heat the tawa. Sprinkle a few drops of water. If it sizzles, the tawa is ready for use.
- Heat the tawa. Put some water. When the water evaporates lower the heat.
- To make the dosais: Pour a ladleful of batter on the outer edges of the tawa. Continue of pour inwards, using a circular motion to the back of the ladle to remove lumps if any.
- Cook both sides till golden. The cooked dosai will have small holes over its surface.
- Serve hot with chutney.
